Mexi-Corn Lasagna

Ingredients
- 1 lb ground beef
- 1 can (17-ounce) whole kernel corn
- 1 can (15-ounce) tomato sauce
- 1 cup picante sauce
- 1 tablespoon chile powder
- 1 1/2 teaspoon ground cumin
- 1 carton (16-ounce) low fat cottage cheese
- 2 eggs
- 1/4 cup grated parmesan cheese
- 1 teaspoon oregano leaves
- 1/2 teaspoon garlic salt
- 12 corn tortillas
- 1 cup (4-ounces) shredded cheddar cheese
Instructions
- Brown meat. Drain.
- Add corn, tomato sauce, picante sauce, chile powder, and cumin. Simmer, stirring frequently, 5 minutes.
- Combine cottage cheese, eggs, parmesan, oregano, garlic salt, and mix well.
- Arrange 6 tortillas on bottom and up sides of lightly greased 13x9x2 baking dish, over-lapping if needed. Top with half of both mixtures.
- Arrange another 6 tortillas, and top with remaining layer of mixtures.
- Bake at 375 degrees for 30 minutes.
- Remove. Sprinkle with cheese and let stand 10 minutes.
- Serve with picante sauce.
