Ingredients
- 2 cans (16-ounce each) black beans
- 1 cans (11-ounce each) mexican style corn
- 1/2 cup scallions
- 1 large tomato
- 2 avocados
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1/2 teaspoon salt
- 1/8 teaspoon hot-pepper sauce
- as needed tostitos or other corn chips
Instructions
- Marinate beans, corn, and scallions in dressing, stirring a few times, at least 3 hours, but no more than 6.
- Add tomato and avocado just before serving.
- Serve with tostitos or other corn chips.
