Chicken Tetrazzini Supreme

Ingredients
- 1 3-pound chicken
- 1 cup celery
- 1 cup green pepper
- 1 cup onion
- 1/2 cup margarine
- 1 10 3/4-ounce can cream of mushroom soup
- 1 2-ounce jar pimiento
- 10 stuffed olives
- 1 16-ounce box process cheese
- 1 12-ounce package egg noodles
Instructions
- Stew chicken until tender; drain, reserving broth. Cool slightly; remove chicken from bone and dice. Set aside.
- Saute celery, green pepper, and onion in margarine until tender.
- Stir in soup, pimiento, and olives.
- Add half of cheese; cook and stir until melted.
- Cook noodles in boiling chicken broth for 10 minutes or until tender. Drain almost all of broth from noodles.
- Add chicken and vegetable mixture to noodles.
- Spoon into a lightly greased 13x9x2-inch baking dish. Sprinkle with remaining grated cheese.
- Bake at 350 degrees about 15 to 20 minutes or until cheese is melted.
