Asparagus Pasta

Ingredients
- 2 pounds asparagus
- 1/4 cup Dijon mustard
- 1/4 cup olive oil
- 1/2 cup shallots
- 2 cloves garlic
- 1 teaspoon anchovy paste
- 1/2 teaspoon thyme
- 1/4 cup parsley
- 1 pound spaghetti
- to taste salt
- to taste pepper
Instructions
- In a large pot of boiling water, cook asparagus until tender and still bright green (about 3 minutes).
- Combine mustard, olive oil, shallots, garlic, anchovy paste, thyme, and parsley. Set aside.
- Cook pasta. Drain, but reserve 1 cup of the cooking water.
- Combine pasta with dressing and asparagus and mix well. Add some of the cooking water if too dry. Add salt and pepper to taste.
